We have written about it briefly so far, we waited a few months since the opening, but in the meantime we have been there several times (I live, coincidentally but also fortunately, a short distance away and now it has become my reference pizzeria).

PIZZIUM in Trieste is the brand’s 46th Italian venue. Each PIZZIUM location is designed to be a meeting point, a bright, pop and welcoming environment, which evokes a Neapolitan home, with almost domestic furnishings: fabric lampshades, exposed shelves full of jars containing pickled specialities, benches and wooden chairs. The interiors are treated in detail, a work of street art, typical wrought iron railings to separate the spaces into small squares and rooms and the neon writing which is the trademark of PIZZIUM and the “social” meeting point of all lovers of Neapolitan pizza.

PIZZIUM Trieste is designed to accommodate around eighty guests and is divided into 2 rooms. The first time we were there we chatted for a long time with Gioele, the manager, who comes from Aquileia, because PIZZIUM favors the hiring of local staff, enhancing skills and traditions.

PIZZIUM pizza takes up the Neapolitan tradition with a long-leavening dough obtained thanks to a mixture of grains with the addition of wheat germ. The dough, digestible and fragrant, is the perfect base for the regional DOP and IGP ingredients used for the recipes of the Regional Pizzas, which constitute the identifying and differentiating proposal of the PIZZIUM menu.

A pizza for every region of Italy and here is the “Friuli Venezia Giulia” pizza: Margherita base with the addition of San Daniele DOP raw ham and Montasio DOP flakes. The Montasio flakes added on top of the pizza at the time of serving offer a contrast of flavors and textures, with slightly spicy notes that blend harmoniously with the sweetness of the ham and the acidity of the tomatoes.

From Milan, PIZZIUM’s fame quickly spread, leading to the opening of over 45 locations in various Italian cities, including Turin, Rome, Genoa, Verona and many others. Each PIZZIUM restaurant has its own unique identity, inspired by the culture and local products of the region in which it is located, without ever forgetting the Neapolitan and Campania roots of the brand.
