Tonight I had few ideas for dinner until I remembered that I had kept some leftover lentils from the day before in the fridge, so I thought about making this recipe with which I made the whole family happy.

Serving dinner at home always becomes a big dilemma especially when we have few ideas on what to serve on the table, but leftovers can sometimes become a great resource as well as a significant source of inspiration.

The recipe I am about to suggest to you is the same one that on several occasions has allowed me to serve a truly delicious dish on the table, thanks to which it even surprised my children who ate the lentils without even realizing it.

In view of dinner, therefore, I reinvented myself with this absolutely incredible dish but delicious to eat with a light vegetable side dish. It is a dish that you can prepare really easily with a few ingredients that you certainly already have at home, but at the same time you make your children eat a few more vegetables, which is never enough. The recipe we must follow includes these ingredients:

400 g cooked lentils,

Three potatoes,

Two tablespoons of flour,

Two tablespoons of parmesan,

A spoonful of breadcrumbs,

An egg,

Salt,

Pepper.

Here’s how to make a recipe with leftover lentils

Let’s start by taking the lentils which must be completely freed from the conservation broth, then blend them with a mixer and then add the flour first, then the breadcrumbs and also the parmesan, and then transfer everything to the refrigerator for the necessary time. Subsequently, let the potatoes cook for at least 40 minutes until they are completely boiledwhich must be crushed and added to the mixture we prepared previously.

Let’s continue work the dough adding the egg, a pinch of salt and a little pepper, so as to obtain a homogeneous and compact mixture. In case you realize that the dough is too hard you can add another egg and half a glass of milk, to make it softer and more malleable.

Now, all you have to do is make the meatballs that you can cook in the air fryer 200 degrees for 20 minutes, or in the oven at 180 degrees for 15 minutes and finally fried in boiling oil until golden brown… serve the meatballs on the table accompanied with a good side dish of vegetables and that’s it.
