Italian mozzarella, the perfect product for summer dishes, is the protagonist at UnoMattina Estate, with the recipes of Elisa Mignani, peasant cook from Coldiretti Cremona.

The well-known Rai1 broadcast this morning welcomed back Elisa Mignani, owner of the “Il Campagnino” farm in Pessina Cremonese and president of Terranostra Cremona, the association for farm tourism, the environment and the territory created by Coldiretti. The hosts Alessandro Greco and Greta Mauro, with the help of the Coldiretti expert, dedicated a focus to mozzarella, from cow’s milk to buffalo milk, focusing on the quality, properties and prospects of this good and light food.

Dressed in the white uniform of the peasant chefs of Campagna Amica and Terranostra, ready in her station with ingredients and work tools, Elisa spoke with Greta Mauro, presenting and creating some simple and tasty recipes, perfect for the summer table. From stuffed mozzarella with cherry tomatoes to salads with morsels, from mozzarella sauces to pizzaiola (“One of my favorite dishes since I was a child” said Elisa), the young peasant cook, born in 1997, presented herself with confidence and ease . Over the years now she has become a “home” presence at the Rai studios in the capital, with frequent participation in programs such as UnoMattina and I Fatti Vostri.

The starting point is always attention to agricultural products, with the invitation to choose Italian products with certain and guaranteed origins. “It’s always a beautiful experience, full of emotions – underlines Elisa Mignani –. Working on a farm alongside my entire family leads me to rediscover and enhance the products of our agriculture, the recipes linked to the territory and the seasons, on the table.
