The students of the third, fourth and fifth classes of the evening course of the San Benedetto Institute of Higher Education in Latina, specializing in food and wine, cuisine, received the certificate of participation in the Life Grace Project from Alba Pietromarchi, expert researcher in the Firab organic supply chain.
The students of IIS San Benedetto with their teachers during the 2023/24 school year joined and participated with their own path in the LIFE GRACE (GRAsslands Conservation Efforts through usage) project, coordinated by ARSIAL, the Regional Agency for Development and the Innovation of Agriculture in Lazio, and created in partnership with Comunità Ambiente srl, University of Rome “La Sapienza” – Department of Biology, FIRAB (Italian Foundation for Research in Organic and Biodynamic Agriculture) and Green Factor srl.
In order to understand the reality of extensive grazing, at the beginning of the course the students met Massimo Pelliccia, a producer of beef from extensive grazing in the territory of the Aurunci Park near Itri and owner of the agricultural company of the same name belonging to the “Nature” program in Campo – the products of the Parks” which illustrated the organoleptic and culinary qualities of the Itri white veal meat.
Subsequently the students were engaged in a meat cutting laboratory led by Mara Labella and Orlando Di Mario, Italian champions of this activity with the support of the young butchers of the Italian National Butchers.
At the end of the workshop, the students of the evening course, guided by their cooking teacher Paolo Forzazan, decided to develop a dish that enhanced all the qualities of this lean meat with an intense flavour. The dish considered most suitable was a Tartare.
The project concluded with a visit to Massimo Pelliccia’s company to see the White Vitellone di Itri reared organically in the extensive pastures of the Aurunci Mountains.
