Dyro Gin, in Torre dei Passeri gin speaks of Abruzzo – Virtù Quotidiane

TORRE DEI PASSERI – The green on the label stands out and tells the outside world about the territory from which it comes. It aims to be the “true gin of Abruzzo”, as its creator says, Dyro Gin, the distillate produced by Fabio Di Rocco in Torre dei Passeri (Pescara).

Twenty-five years old, always in the coffee sector with the family business, Madiro Service, Fabio decided two years ago to “create something of my own. I’m passionate about gin and I wanted to propose something that reflected me.”

He created the recipe personally, choosing botanicals that speak of Abruzzo.

“Three are entirely from Abruzzo,” claims the producer, “that is, mint, lavender and juniper oil. My gin aspires to be the true gin of Abruzzo. Until now I don’t think there are products of this kind with all this Abruzzo botany.”

In total there are 9 botanicals: in addition to the three from Abruzzo, sweet orange, cardamom, wild fennel, coriander, thyme, and finally a secret ingredient are added.

The gin takes its name from an abbreviation of Fabio’s surname, Di Rocco, trying to give it an international flavor.

“For the label I wanted to use the color green, because Abruzzo is the green region of Europe and I wanted to enhance this aspect of the territory, rich in parks and nature reserves. The colors change depending on the light.”

For distillation, Fabio relied on a company rooted in the Abruzzo production fabric, Enrico Toro, active since 1800.

“We have created a recipe which, fully respecting the rules of classic distillation, offers a unique and distinct sensorial experience. The result is an elegant and balanced gin, perfect to be enjoyed pure or used as an ingredient in high quality cocktails. The production we did last year is already finished. The debut went very well and Dyro Gin is present in many local places, such as bars, discos and wine bars. Naturally the goal is to grow both in sales and in production by making more lines. It’s not a classic gin. It has an authentic, citrus, floral taste and later the herbaceous notes rise. It is a product that goes well with an aperitif, but also holds up well throughout the meal.”
