The “Mulino Bianco” speaks Novara dialect. That’s right: most of the flours used for Barilla biscuits come from the province of Novara, Galliate to be precise. The curiosity was revealed on the occasion of the 30th anniversary of the company which opened its doors last Friday 3 May.

The mill is located in Galliate and employs 20 people including experts in quality control, milling, food technologists and agronomists. In Galliate, over 80 thousand tons of wheat are milled per year, 12 tons per hour and 65 thousand tons of flour are distributed between Novara, Rebbiano, Cremona and Castiglione. The biscuits, pan bauletto, crackers and rusks are Novaresi but the flour used for the Buongrano and Gran Cereale biscuits is 100% made in Galliate: 100% Italian and 100% sustainable.

Processed grain is entirely sustainable with a three- or five-year rotation plan for key crops.
