“Tavola Latina” returns in May, the cultural-gastronomic project linked to South American cuisine – Luciano Pignataro Wine Blog

The third edition of the event will take place from Monday 27th to Thursday 30th, bringing together dinners, starred talk shows and tastings, with a special focus on spices and spiciness

After the success of the first two editions, the third appointment with Tavola Latina – the cultural-gastronomic event dedicated to South American cuisines and their different variations – drops the poker, going from three to four days. The event, conceived by a team of journalists led by Giacomo Iacobellis, takes place from Monday 27 to Thursday 30 May in Florence, involving a series of venues around the city that will host the different moments. If the focuses of the first two editions were ceviche and meat respectively, this year Tavola Latina will put the spotlight on the world of spiciness and spices, which have always been present in the collective gastronomic imagination linked to Latin countries.

As per tradition we begin with the Opening Party on Monday 27th, al The Lodge Club (viale Poggi, 1) which will see five names – the chefs Simone Cipriani (Essenziale), Francys Salazar (Sevi) and the masters taqueros Tommaso Fontanella (ToscoTacos), Riccardo Ricci (MotoTacos) and Gabriel Hernandez (Raíces) – try their hand at classic and innovative recipes, using the meat provided by butcher guru Alessandro Soderi and tortillas from La Morenita. Along with tacos, Cinzia Otri’s ice creams inspired by South America, Noalya Venezuelan chocolate, Yerbito liqueur and pisco-based cocktails distributed by Zafferano Spirits. The evening will be animated by the traditional Mexican music of the Mariachi group El Magnifico de Florencia.

The second day will be staged at the restaurant Sign (Hotel Plaza Lucchesi) a special lunch dedicated to the use of chocolate in savory cuisine, with resident chef Tommaso Calonaci together with Carlotta Delicato (Ristorante Delicato, Contigliano RI) and Vincenzo Artadi Carbajal (Miro Milano). In the afternoon the Social Hub will host a tasting of Noalya chocolate, Yerbito liqueur and Nocilla cigars, while after sunset the Torrigiani greenhouses will host the Florence and Tuscany Cocktail Week pop-up involving 4 Tuscan cocktail bars and the new Brazilian sushi restaurant Batukada.

The third day of Tavola Latina 2024 opens at the brand new restaurant Osmo (Floren Luxury Hotel, via Panzani) which will host the starred chef Salvatore Morello (Inkiostro, PR) who interprets the spicy flavors of different worlds, from Calabria to South America, together with the resident Marco Anselmi. In the afternoon at Salt Theatre (via de’ Macci) from 3.30 pm the talk show “The Chimichurri vs spices of the world” will be on stage with the starred chefs Karime Lopez (Mexico), Salvatore Morello (Italy), Stelios Sakalis (Greece), Paulo Airaudo (Argentina) and Paolo Lavezzini (Italy). From 6pm to 7pm Next Door Gunè (Via del Drago d’Oro) will host an event that will see three well-known South American influencers behind the counter, with bartender Eleonora Romolini. The day ends on a high note with the starred dinner prepared by the Argentine chef Paulo Airaudo (Luca’s Restaurantinside the La Gemma hotel) accompanied by the classic method of Zafferano Spirits.

The fourth day of Tavola Latina 2024 starts at Golden View (via de’ Benci) which will be the setting for the lunch “Central Italy interprets Central America” with the Umbrian star chefs Andrea Impero (Elementi Borgo Brufa) and Ada Stifani (Ada Gourmet) who together with the resident chef Andrea Candito will interpret typical dishes interspersed with reading in the original language taken from the book “The longest penalty in the world” by Osvaldo Soriano, accompanied by the wines of the Argentine footballer Nicholas Burdisso’s company. Finally, a final toast with two spicing traditions compared: on the one hand Sevi’s Peruvian cuisine, on the other the Indian cuisine of chef Johty Singh (Haveli).
