in Savignano the book edited by the agronomist Stefano Tellarini

On Wednesday 19 June at 8.45pm the Rubicone Gastronomic Library in Savignano offers the Romagna public the presentation of the book “The old grains of Romagna, the Romagnoli of the old grains”, a publication by Edizioni Corriere Romagna edited by the agronomist Stefano Tellarini, expert of old agricultural varieties and of our peasant culture.

This work is precious because it tells the story of wheat and the people linked to it: the people, the scholars, the technicians present in our territory since ancient times – as also demonstrated by the finds in the Museo del Compito – until the disappearance or almost old local varieties, dating back to the Second World War. With great sensitivity Tellarini does not fail to pay homage to the “common people” of wheat, the group of sharecroppers, laborers, trimmers, threshers, gleaners, millers who supplied flour for breads and piadinas in our kitchens. And then a new young generation of organic farmers, millers and sourdough bread makers who today, carrying forward buzzwords such as environment, health, sustainability and tradition, offer development opportunities to areas often considered marginal.

In addition to the author, Stefano Pransani, with the family mill active in Bivio Montegelli since 1921, will therefore also take part in the meeting; Silvia Bonzio and Luca Minarini, from the Slow Food Community of the High Wheat of the Apennines. But there will also be three young companies, protagonists of the recovery of historical varieties and new bread-making in Romagna, with their products and their beautiful stories: Demetra from Longiano, Pasta Madre from Gemmano and Orticà from Roncofreddo.
