A cuisine dedicated to the rediscovery of the territory, with prices accessible to all: this is the idea behind the new restaurant by Gianfranco Vissani, which opens its doors next to its historic restaurant overlooking Lake Corbara. TerritOri, the new restaurant by Gianfranco Vissani

Casa Vissani, a beautiful place overlooking the banks of the Corbara lake, is the jewel of the Umbrian chef: it is located in the village of Baschi, where Gianfranco was born and raised, the place he can truly call “home”. It is obviously a gourmet restaurant, with a highly selected selection of dishes capable of satisfy even the most refined palates. Of course, the prices are not within everyone’s reach.

This is why Gianfranco Vissani, together with his son Luca, decided to open TerritOri: a “popular” restaurant, which offers more traditional cuisine made up of genuine flavours, with decidedly much more accessible prices. The objective is to broaden the target and serve a further type of customer who wants to try a different experience without having to pay huge amounts.

The entrance to the new restaurant is the same as that of Casa Vissani, but once inside there is the possibility of choosing which environment to consume your meal in: on the one hand there is the Classic Roomwith its historic gourmet proposals (and some new features arriving with the new season), on the other hand there is the Rock Hallwith a less elaborate offer and focused above all on local flavours.

“We would like Vissani’s experience to be understood as one daily possibility, to come and visit us more often and, above all, to learn more about the products and cuisine of our territory. A more inclusive and comfortable experience, not only from a gastronomic point of view, but also for the wallet” – he explained Luca Vissani on ‘Today’.

The menu and prices of the restaurant

The TerritOri menu, Gianfranco Vissani’s new restaurant, features a wide choice of zero km products: 80% of the ingredients come from Umbria, with some small exceptions for those excellent products coming from other Italian regions. In total, the menu offers 16 courses (12 savory and 4 sweet), as well as a smaller selection of wines from the Casa Vissani cellar, together with a “tasty” surprise: aexcellent choice of Umbrian craft beers to taste.

Let’s see in a little more detail what dishes are on the menu. The appetizers they are simple and genuine: they range from the classic platter of cured meats and cheeses served with fried gnocco to the more sophisticated aubergine parmigiana with salted butter and chives. THE first they are excellent, with a wide choice of umbrichelli artichokes and Grana, risotto with coltellacci and black garlic and Colfiorito red potato gnocchi “alla delinquenza”.

Then there’s room for them second courses: the whitefish with amatriciana sauce has all it takes to become the centerpiece of the house, but for those who love meat there is the Umbrian lamb with mashed potatoes. There are some missing vegetable proposals, such as the Castelluccio lentil liquid and the Cannara onion omelette. Finally the desserts, to end the meal with sweetness.

Prices? The menu has a price list that goes from €25 to €30 per serving – with the exception of desserts, which cost less. Those who want to enjoy a complete gastronomic experience can opt for the ‘I Take Everything’ routewhich includes the choice of three savory dishes and a dessert for the price of €85.
