BARI – On Monday, June 17, at the Gola Cafè Bistrot headquarters in Bari, “Le mani in pasta” began, a first-level training course for the restaurant business dedicated to girls and boys with autism spectrum disorder, organized by Gola Cafè Bistrot di Maurizio Mastrorilli and Asfa Puglia, a non-profit association supporting families with autism.

This social project is financed with funds from the municipal tender “A shop is not just a shop” initiative to support neighborhood shops, implemented as part of Bari 2022 – 2024, the program to support the proximity economy of the city of Bari, and financed with resources from the National Program Metro plus and medium-sized cities South 2021-2027, promoted by the General Coordinator of the project Roberto Covolo and the outgoing Councilor for Commerce of the Municipality of Bari Carla Palone. The primary objective of the initiative of the Bari restaurant is to teach young people with autism to carry out professional tasks within catering businesses with standard functionality.

The course includes ten training modules of 2 hours each during which theoretical and practical activities will be carried out specifically designed based on the special characteristics of four “apprentice” participants, who will be supported by as many tutors and two professional trainers who will address related topics to the dining room, kitchen and warehouse management sectors. All the material used during the course will be “open source”, therefore made available free of charge to anyone who wants to repeat, expand and improve this project.

The four in-house trainers, Michele Simplicio, Angela Demattia, Maria Ciancio and Menica Capurso, will hold the lessons under the supervision of Maurizio Mastrorilli and will address various topics including the history and preparation of focaccia and fresh pasta, the creation of gourmet desserts and sandwiches, how to set the table, welcome customers and manage the warehouse.

The involvement of Asfa Puglia in the social part of this course was the natural evolution of a collaboration already started some time ago through small solidarity initiatives. For our young apprentices and their families it is a new experience, as well as an opportunity and a great hope for the ‘after us'”.

All the meetings will be held twice a week at the Gola Cafè Bistrot headquarters and, at the end of the training course, the young restaurateurs will participate in a final test with the preparation of an aperitif menu entirely prepared by them with the support and offered to relatives and friends.
