Licata welcomes with a new look The Sideboardthe two Michelin star restaurant of Pino Cuttaia inaugurated together with his wife Loredana in 2000. Where it obtained the first Michelin star in 2006 and the second in 2009. Located in the province of Agrigento, this little gastronomic jewel has reopened its doors offering a renewed culinary experience deeply rooted in Sicilian tradition. La Madia presents itself with a warm and welcoming atmosphere, curated by the architect Fatima Costa with light wood walls, decorated with author’s shots. The new room expands the environment, redefining the canons of the fine dining, an ideal setting for a gastronomic journey through the colours, flavors and scents of Sicily. The tangerine-colored leather upholstered chairs, designed by Patricia Urquiola, and the lamps that resemble fishing rods are details of timeless elegance.

The call of the Mediterranean

La Madia by Pino Cuttaia, Licata (Ag)

As well as it chef bistelato scrupulously selects the ingredients of his cuisine, even in the project the selection of materials was careful, in line with the nature of the people and the place: natural, refined woods, marble to recall the nearby salt mines, and iron, treated with a special technique to enhance its warmer nature. Without forgetting the call to the sea, source of inspiration and nourishment, which also permeates La Madia. From the choice of colors to the shapes of the furnishings, everything evokes the Mediterranean.

Tribute to Sicilian culinary tradition

Pino Cuttaia’s cuisine continues to evoke memories and sharing, celebrating the deep connection with the Sicilian territory. Each dish is a journey through time, a tribute to the roots of home cooking, but with an innovative vision that surprises and delights. A reassuring experience because the flavors are known and lead back to moments spent around a table with the family. The choice of ingredients, even the simplest, is enhanced by the skill of the chef, bringing the guest into a unexplored territory of tastes and sensations where each dish tells a story.

In addition to the à la carte menu, La Madia offers three tasting itineraries: “The Illusion”: a seven-course selection that celebrates the history of the venue with iconic dishes such as “La pizzaiola” (€150). “The Unexpected Sea”: eight courses that explore marine flavors with dishes such as “Quadro di alici” and “Tagliolino scampi and citrus fruits” (€170). “The Staircase of the Turks”: a journey between land and sea that tells the story of the Sicilian territory through eight courses (€190).
