Meat, burgers, pizza, raw, cooking. All seasoned with just one ingredient: experience. And the name clearly says it too: The Brace Food Experience. In Palermo, a few steps from the historic center, in via Emerico Amari, a place that promises to give emotions in the kitchen. But what an experiment, too.
They will do it in the new pizza menu with a novelty: the introduction of crackles. But not only. The pizza chef, Sergio Vinci, decided to take a risk and offer the most criticized pizza in Italy: the one with pineapple.
“I like to throw myself into the void – Vinci tells us – and so I will create a scrocchiarella with a base of smoked sauce, raw bacon and caramelized pineapple pearls. I wanted to provoke, but I’m sure that when customers taste it they won’t be able to do without it.”
For him, pizza is a taste and at the Brace Food Experience we try to please everyone. A contemporary version is offered, slightly crunchier to match the typical flavors of Palermo pizza. Thus we try to combine two styles in one winning combination.
The doughs There are four offered at 72 hours of maturation: there is the classic one with a blend of Petra flours rich in fibre, the real one with 00 flour, the wholemeal one and the gluten free one. “I offer traditional pizzas but I also create special features that can arouse the customer’s curiosity”. This is the case of one of the best-selling pizzas, the “16 June” with truffle cream and Chianina tartare. On the menu there are classic but also innovative ones as well as stuffed ones. All with the highest quality ingredients and with a reference to territory.
“I am one of the few pizza chefs who believes that there is not just one type of good pizza. And so I experiment, create and accept criticism which, if done well, only leads to personal growth and the quality of the products offered”.
