MILAN – The rebellious and creative soul of chefs Viviana Varese is expressed well in his latest Milanese project: Faak “Food and Wine at Natural Rebellion”. A taste factory that doesn’t follow the rules, where you can enjoy a delicious breakfast, have an aperitif, or enjoy a lunch or dinner break with simple dishes that require preparation in the oven or on the grill. But also pastry shop, cafeteria and laboratory with direct sales of own-brand products.

Inaugurated on April 16th in Via Arnaldo da Brescia 5 in Milan, Faak follows the trend of a popular venue, with an average price and a quality proposition: a new and unconventional concept aimed at a varied audience that adapts to life neighborhood dynamics.

Faak “Cibo e Vino a Ribellione Naturale” was born from Viviana Varese’s desire to create a revolutionary place characterized by the excellent quality of the products offered and the ingredients used. A place that takes on different nuances depending on the time of day and where the ingredients become true protagonists of the art of creation, between oven and embers. The goodness of raw materials, technique and passion meet the craftsmanship of pastry making, the magic of bread making and pizza, Viviana Varese’s first love, but also grilled cuisine which enhances authenticity and taste together with a selection of wines particularly focused on excellence niche and coming from small producers. Faak is a pastry shop, bakery, bar, restaurant and laboratory: many souls in the same environment for a multifaceted experience where food and conviviality meet between sweet and savory specialties and good wine.

Open all day, Faak is a “taste factory” that adapts to every occasion and offers an offer of products and a menu focused on the ingredient, which becomes the real protagonist. Ample space for desserts and pastry art – from breakfast to snacks to dinner, including croissants, cakes, pastries and leavened products – but also for bread-making, with the use of prestigious and artisanal flours. And again, a cafeteria with selected blends, light lunches with sandwiches, toasts, focaccias and baked menus, a refined choice of cheeses, cured meats, meats and vegetables.

Delicious aperitifs and an evening proposal that synthesizes wine, barbecue and pizza: great interest in meat and vegetables, particular attention to pizza – Viviana Varese’s first love – and baked and campfire desserts. Furthermore, the wine list is intended for multiple palates thanks to a proposal enriched by travel, the search for excellence and small winemakers in constant ferment. Finally, what makes Faak unique is an open laboratory for the production and sale of its own brand products, including jams, spreads and juices.

Located in Via Arnaldo da Brescia 5 in Milan, Faak seats around 40 people and is also enriched with an outdoor area which will be open from late spring. An environment characterized by a rock and incisive soul that reflects Viviana Varese’s desire to return to her roots, between flour, dough and fire. Black is the basic element of the project, the architectural part of which was handled by B-arch Studio di Sabrina Bignami And Alessandro Capellaro: shade which, like a blackboard, allows you to express all the colors and materials that tell of embers and fire. The architecture is simple and intuitive, the paths are free, where the gaze can run seamlessly between the finished product counters, the fire, the large grill and the kitchen. Finally, some iconic design elements, such as the Rey seat by Hay, fit well among simple materials such as iron, black wood and ceramic.

Rebellious and rock, the creativity that Almagreal created for Faak gives voice to the irreverent and biting soul of Viviana Varese. The Florentine agency, led by Giulia Reali, oversaw the construction of the brand, from the design of the brand to its positioning, up to the image, the signs, the menus and the internal layout created with site and the revolutionary tone of voice and subversive by chef Viviana Varese; as well as uniforms, websites and digital communication. Posters and postcards play with statements that highlight irony, light-heartedness and cheek, seeing the “Faak” characters of men, women and dogs as protagonists. And then brushstrokes of color, material, imperfect, to recall the tongues of the flames, symbol of this project that breaks the mold.
