TODAY IS – Today, April 30, is Saint Pius V Pope. Today is also National Golden Pasinata Day. In some countries the same preparation takes the name of “fogaccia pasquale”, “crescenta”, “schiaccia”, but pasimata is the name that everyone remembers due to the similarity with the Latin word passamatum, with the Byzantine word pasimet, both indicating methods of preparation which however does not correspond to what the traditional recipe actually is.

Perhaps the origin is simply to be found in the word passio, in the memory of the passion of Christ and Easter. In any case, each family has its own pasimata, the recipe preserved and handed down over time, the laborious and ancient preparation calculated in such a way that it can be ready to be consumed during Lent and be brought on Holy Saturday to be blessed in church.

It was considered a ritual bread, in its original version not sweet but which with the passage of time was slightly modified with the inclusion of, for example, sugar and raisins in the dough until it became the dessert of today’s anniversary, a good to be shared among everyone, meaning union and brotherhood.
