A BABA’ BETWEEN SICILY AND CALABRIA FOR AIRC – ME Style

A pastry chef with a heart of gold. Always involved in initiatives that support research and advance the objective of protecting and enhancing the cultural heritage of traditional pastry making, the ambassador of taste Lillo Freni will be one of the great protagonists of the third edition of BOB FEST which will take place on Sunday 30 June in Borgia, in the province of Catanzaro, at the Scolacium National Archaeological Museum and Park.

This is a large national charity food and wine event, which aims to enhance Calabria as a destination and which will see the participation of over 150 professionals including starred chefs, pizza chefs, pastry chefs, street fooders, winemakers, bartenders and local producers. The proceeds will go to support cancer research AIRC Foundation which has been involved in research to cure cancer since 1965.

The motto is “All united for the search” and the pastry chef from Messina Lillo Freni, owner of the historic pastry shop of the same name in Contesse, has gladly accepted for the second year the invitation of the organizers Roberto Davanzo and Anna Rotella, of tell his Sicily through a dessert and give his personal contribution to the charity fundraising event.

For the occasion, the ambassador of taste will unite the two banks of the Strait with an iconic pastry dessert, the babà which, through the use of ingredients from Sicily and Calabria, will create the perfect combination of tradition, innovation and valorisation of the two territories. “A babà between Sicily and Calabria” is the name chosen for its sweet specialty which expresses the innate passion for leavened products of Lillo Freni who is well known, well beyond the Sicilian borders, for his artisanal panettone with living sourdough, which has been awarded several times in important competitions.

Il babà soaked in light rum will be completed with chantilly al limone, chopped candied bergamot and strawberry coulis.
