BOLZANO. Sushi: perfect combination between the words “su” (vinegar) and “meshi” (rice), an ancient art that has conquered palates all over the world and which is once again celebrated by Gambero Rosso in the new edition of the Sushi Guide 2025. Which also sees two restaurants reported in Alto Adige (one in Trentino). Between sushi bars, fusion establishments, fine dining, taverns, take-away and delivery, the Gambero Guide interprets this new scenario with a careful selection of the best places to enjoy the most famous Japanese food in the world: 223 addresses of establishments that have invested in quality and innovation, between authentic flavors, but also more modern influences, for an increasingly popular food that continues to attract new consumers.

The Three Wands

There are 32 excellences awarded with the “Three chopsticks” which offer the best sushi proposals throughout the country: the majority are concentrated in Milan, today the capital of Japanese cuisine in Italy, one of the first cities in our country to have welcomed the first restaurants. Starting from the famous Poporoya sign from which the history of sushi in Milan began in 1989 with chef Hirazawa Minoru, known as Shiro, who slowly managed to overcome the Italians’ reluctance towards a cuisine that was then mysterious. What turns out to be a great surprise, however, are regions such as Puglia and Campania, which are more linked to Mediterranean traditions and which have instead witnessed a significant increase in restaurants offering Japanese specialties in recent years, often reinterpreted with a local touch. Molise is absent.

Trentino Alto Adige

No “three wands” in the region. But with three highlighted establishments, the most important cities of Trentino Alto Adige are leading the way in Japanese culinary culture, confirming a broader trend that sees sushi as an alternative, appreciated for the variety of flavors and the art of preparation. A new challenge for this region closely linked to traditions where new gastronomic trends could give rise to an interesting fusion between tradition and modernity. Bamboo Alpensushi in Bolzano is a well-known establishment in the city for those looking for a sushi offering in a quiet and elegant setting. It has recently been renovated in terms of interior and offering. Sushi Minto of Merano with its fusion cuisine and its wide sushi offer within a recently renovated structure that stands out in the residential district of Merano. Sushi Zen of Trento, a refined and elegant venue that stands out for its longevity in the Trentino capital and where the open kitchen showcases a great variety of traditional dishes and more creative proposals.
