BRINDISI – A “light” four-course menu will be offered to the G7 leaders at the inaugural dinner on 13 June in the Castello Svevo in Brindisi in which the President of the Republic Sergio Mattarella will also participate. «They will be traditional Apulian dishes – says Pierangelo Argentieri, president of Federalberghi and director of Tenuta Moreno, which is entrusted with the organization – but not only that, fish from all over the region and much more».
The entrepreneur assures that «all Apulian ingredients will be used. We will start with a scorpion fish with dried tomatoes and aromatic herbs, accompanied by barattieri and Fiaschetto cherry tomatoes from Torre Guaceto.”
The second course will be «partly a tribute to Italian cuisine. We are talking about tortelli filled with gurnard, therefore with fish, with julienne of smoked bluefish». And again, «the snapper fillet with Toritto almonds and a burrata cream from Andria with a crumble of sweet tarallo and railway cherries».
The dishes will be accompanied by the renowned local wine, then the bitter Carduus from Brindisi and the Fadi coffee from a roastery also in the Messapian capital. The G7 leaders, their staff and diplomats will be welcomed in three separate rooms.
