GUBBIO – Borgo Santa Cecilia, the restaurant immersed in the uncontaminated nature between Gubbio and Perugia, recently successfully concluded the fourth appointment of the “Il Borgo Selvaggio” project, a unique format that offers guests a complete experience at the estate, exploring the sustainable philosophy of the structure and culminating in a lunch organized in a clearing, recreating a real restaurant in the woods. A decidedly special “dining room” that offers an immersive sensory experience, with the natural flavors, sounds and smells of the surrounding forest.

“Borgo Selvaggio is our way of understanding a food and wine experience – he states Giuseppe Onorato, owner of the estate – an event that we organize several times during the year to offer the public the opportunity to experience the emotion of direct contact with nature while sitting at the table. A project born in collaboration with the prestigious Teritoria association and which, upon request, we can also organize privately for guests who want to treat themselves to the experience of a lunch in a real restaurant in the woods”.

“Borgo Selvaggio” includes a series of extraordinary activities: from a tasting of Onorato cured meats directly in the maturing cellar, to then continue with a walk in the woods offering a moment of intense connection with nature. It all ends with a lunch prepared by the chefs Alessio Pierini And Serena Sebastiani served inside the forest, with rustic and authentic dishes and selected wines to match, for a truly unforgettable culinary experience.

Guest chef of the last Borgo Selvaggio event, Archangel Tinari of the starred restaurant Villa Maiella, who together with the two resident chefs of the Borgo Santa Cecilia restaurant, created a refined 6-handed menu. The dishes, cooked directly over an open fire, were made with fresh ingredients collected in the woods adjacent to the estate and with local products.

The Borgo Santa Cecilia Restaurant is a true paradise for lovers of “wild” cuisine and gastronomy, but above all authentic and natural. A small restaurant that embodies the sense of the connection between food and nature and which, in addition to excellent cuisine, transmits the value of “real and genuine food” where you can enjoy self-produced raw materials. Organic agriculture, pig and lamb farms in the wild, local cheeses, are just some of the forgotten and authentic flavors that the Borgo Santa Cecilia restaurant wants to rediscover.

Located within the estate of the same name, famous for its extraordinary wildlife (wild boars, roe deer, deer, hares, partridges, pheasants, woodcocks and partridges), it offers guests an exclusive production of cured meats, the result of the family’s pork butchery tradition Honored. Before lunch or dinner, guests can visit the maturing room and have a cured meat tasting inside. Among the dishes offered are game tortelli, tobacco and goat stracchino, roast lamb with yoghurt and tandoori spices, wild boar ceviche, cardoncello broad beans and cypress.
