In the Torrione Passari in Molfetta, the first exhibition of sacred art entirely made with edible works, therefore, which can be eaten. These are the airbrushed chocolate eggs of Nicola Giotti, representative of the third generation of a family of pastry chefs from Giovinazzo. The exhibition, entitled «Via Lucis», promoted by the Valente Foundation with Confartigianato Bari-Bat-Brindisi and Città di Molfetta, will remain open until May 24th, every day (except Mondays) from 6pm to 9pm (on Sundays also from 10am to 1pm). Therefore, with Nicola Giotti the chocolate eggs become a sweet canvas on which to give shape and image to paintings of sacred art, in this specific situation, particularly evocative and exciting drawings because, as the title of the exhibition suggests, they shine with light, an inherent element in chocolate, enhanced by the invention of “glossy specular indirect airbrushing”. It is a sweet art decoration technique invented by Nicola Giotti himself, consisting of airbrushing, through the use of food colours, covering films into the polycarbonate mold inside a concave and transparent shape. A particularly difficult and laborious operation which is completed by pouring the melted and tempered chocolate into previously airbrushed moulds, a process which will determine the molecular assimilation of the color pigments and, with the subsequent crystallisation, the definitive creation of an artisanal artefact of rare beauty and shine.

Born in 1975, Nicola Giotti has a strong bond with Molfetta having attended the local hotel institute as a model student, where he graduated in 1994 as the best student in the school. Subsequently, he deepened his studies and knowledge of pastry making by participating in dozens and dozens of training courses with the best masters and professionals in the sector worldwide.

Then, in 2010 he began the experiments that would lead him to invent “glossy specular indirect airbrushing”, consecrated as a pastry decoration technique in 2018. A technique through which Giotti creates true works of art, starting from the inimitable eggs of chocolate similar to very precious porcelain on which he also depicted Pope Francis on the occasion of the apostolic visit made to Molfetta in 2018. Many stars from the world of entertainment were also immortalized on his sweet creatures, from Elena Sofia Ricci to Mariagrazia Cucinotta, with whom he participated in a short film as a pastry expert, from the Hollywood star John Turturro to the director and actor Sergio Rubini up to the rock star Vasco Rossi, the presenter Mara Venier, the rapper Caparezza and the actor and voice actor Luca Ward.

Judge in some of the most important pastry competitions, in 2020 Giotti published his first book «Metamorphosis» published by Chiriotti, the most prestigious publisher in the sector, a volume which in 2022 the author presented in the Senate with his eggs airbrushed chocolate.
