Ribbon cutting for ‘Pesciutta’ the new restaurant in Coomarpesca

After “PesceAzzurro” it is the turn of “Pesciutta. Cuoco di Mare” the new restaurant launched by Coomarpesca. The one in Fano is the first of a series of venues that the fishermen’s cooperative intends to export to the big cities, starting with Bologna. Yesterday the inauguration with the cutting of the ribbon and, immediately afterwards, the opening to the public of the new restaurant, located in via delle Querce, in the area of ​​the former sugar factory. “We hope to bring some liveliness to this area – commented the president of Coomarpesca and PesceAzzurro Marco Pezzolesi – where there is no problem of disturbing the neighbours”. Eight people were employed: 4 in the kitchen and the others divided between the cash register and the dining room. “Finally, after the difficult years of Covid – underlined the president of Legacoop Marche, Gianfranco Alleruzzo – we are investing in a new activity which, based on a scientific study, will support the Bluefish: this is how wealth and jobs are created”.

“Although it is not easy to find – Pezzolesi immediately pointed out – staff who want to work on Saturday and Sunday”. And the regional councilor for employment, Stefano Aguzzi, spoke about the Region’s commitment to increasing employment, through the meeting of supply and demand: “We are organizing training courses to meet the needs of small companies that they are looking for specialized personnel but they don’t have the strength to train them internally: this is one of the ways to recover the inactive ones”. The new restaurant model “Pesciutta. Cuoco di Mare” offers first courses with various fish sauces, fried foods, burgers and fish wraps but also salads. Meals can be consumed in the restaurant, there are 20 seats inside and 50 outside, or take advantage of takeaway and drive-through with entrance reserved for cars. The restaurant will be open all year round, 5 days a week, from Wednesday to Sunday, from 11.45am to 3pm for lunch and from 5.30pm to 11pm for aperitifs and dinner. There is no table service, you order and pay at the cash register and, thanks to an electronic mechanism, the customer is notified when his order is ready. For the mayor Massimo Seri, after the PesceAzzurro (last Sunday alone the restaurant in Fano welcomed 1900 people ed.), from Coomarpesca comes “another beautiful and ingenious idea: congratulations, you are the pride of the city”. “The slogan used for the information campaign – Coomarpesca says – is ‘I choose Pesciutta’ and identifies itself with a fisherman – the seafood chef – with a passion for cooking. His distinctive element is the beard found in all the materials and in the layout of the restaurant. The seafood chef is the symbol of the maritime tradition defended and enhanced by our cooperative”.
