There is a delicious family story where our grandparents’ pizza has stood the test of time!

The secret recipes handed down for generations can be found in Caserta, where two talented nephews are conquering the people of Caserta with extraordinarily digestible and crunchy pizzas. A taste of tradition and passion, contained in every bite of pizza.

Enzo and Emanuele Balbi, young and talented Neapolitan pizza chefs, took the secret recipe handed down from their grandfather and dedicated themselves to the creation of light and crunchy pizzas, bringing their knowledge to the historic heart of Caserta. For four years they have been responsible for “Zerottantuno Beautiful Naples“, a welcoming place that opened in 2020 in via San Carlo 57.

Originally from Secondigliano, Enzo and Emanuele, aged 24 and 22 respectively, share a passion for leavened preparations and haute patisserie desserts. On their menu you will find artisanal pizzas and homemade desserts, from classics reinterpreted with double cooking to strictly “crispy” creations.

The Balbi brothers put soft, light pizzas in the oven, prepared with a traditional Neapolitan dough left to rise for 12/13 hours at room temperature. This process guarantees excellent hydration of 70/72% of the dough, making it highly digestible. The effect is amplified by the leavening that takes place inside the rooms with tuff walls.

Being the third generation of pizza chefs, the Balbi brothers were raised in the art of pizza: their grandfather worked as a pizza chef at the famous pizzeria Emperor in Naples, while his father owns a take-away pizza restaurant in San Marco Evangelista. Enzo has also accumulated experience working in various pizzerias throughout Italy.

High quality ingredients, seasonal products and a shared passion are the distinctive elements of these two young people who have finally realized their dream by opening their own pizzeria.

Monday is a day of rest for the staff but during the week they are committed to expanding their knowledge by participating in refresher courses and pizza chef tournaments. From Tuesday to Thursday in the afternoon there is the exciting ritual of the aperitif with a selection of the best fried delicacies such as crocchè, omelette with Scarperiello, Nerano and the classic, accompanied by slices of pizza with unique flavours. All naturally washed down with refined gin and tonic.

The welcoming pizzeria can accommodate up to fifty people and on Saturdays only 50% of the tables are reserved to reservations to allow those who decide at the last moment to enjoy a delicious pizza in Caserta. In the room you will find the girlfriends of the Balbi brothers: Maria Grazia (25 years old) and Sara (23).

Our palate had the honor of a unique experience, with extraordinary flavors and surprising combinations. This dessert is a culinary masterpiece that combines classic ingredients in an innovative, tasty way!

At the base there is a milk cream enriched with crunchy hazelnut, revealing a perfect balance of textures! On the outside there is a semi-crispy white chocolate icing that envelops the dessert. In the center there is a velvety ganache flavored with vanilla. But the magic doesn’t end there! An insert of apricots and Caiazza black olive powder gives an intriguing touch.
