The venue in the province of Livorno, in the ranking that rewards those activities capable of “intercepting new trajectories and seeing roads that others don’t see”, came close to the podium, finishing behind only, in order, the Luminist of Naples, the SanBrite of Cortina d’Ampezzo and IO Luigi Taglienti from Piacenza. On a par with Il Sale, however, AlpiNN _ Food Space & Restaurant in Kronplatz (Bolzano), the Torre restaurant in Fondazione Prada in Milan, Arnolfo di Colle Val d’Elsa (Siena), Mazzo and Ninù (both in Rome) and Vector of Bari.
When compiling the ranking, various criteria were taken into consideration, such as entrepreneurial vision, the ability to generate well-being, the gastronomic offer, innovation and the relationship with art, architecture and design.
