Vcontrasting threads, perceived as antithetical, at times factors of existential worry, we then arrive at Bastia Umbra (Pg), a short distance from Assisi (Pg), and we joyfully discover that the two concepts of immanent and transcendent coexist very well. One supports the other and both, like a sort of cogwheel, trigger the ascent towards a better quality of life. We are at Food & Wine Resort La Favorita. Transcendence is provided by the distant view of Mount Subasio, from Assisi, from the Porziuncola to Santa Maria degli Angeli. The La Favorita team takes care of providing immanence in abundance.

Team originally from Emilia. From Emilia to Umbria. Why, how come? God the brave Cesare Capredi, Emilian from Modena, arrived in Umbria for work a quarter of a century ago. Growing experience in catering and hospitality. And is an Emilian tavern imaginable without the rezdora?! Absolutely not! And in fact, Osteria Emiliana has Rosy, the Rezdora who does everything because she knows how to do everything, in the kitchen.

What you eat at La Favorita

A Sunday lunch, yes in short, Sunday lunch, must be indulged in (and even deserved, considering the outcome of the reservation!). Alone, the Lasagne della Rosy, six layers of green pasta with traditional ragù, are worth lunch and lunch, in turn, is worth the trip to Bastia Umbra.

But it’s not like on Sunday lunch, start with the first course, even if it’s there lasagna from the Rosy, does it lay badly?! And then there is the appetizer, not exactly frugal and vegetarian, which is Emilia Love. Just three cutting boards. On the first, a selection of Mora Romagnola cured meats, black Parma ham, coppa Piacentina, gentle gut salami, Slow Food presidium mortadella, crunchy homemade Giardiniera and Parmesan Reggio Emilia. On the second cutting board: Homemade lard pesto flavored with rosemary, grated mature Parmigiano Reggiano, Squacquerone Dop of San Petrignano and crunchy seasonal vegetables. On the third platter, just to keep things light, stewed pork Cacciatora with Friggione and squacquerone ice cream.

Well, now that slight peckishness is almost waning. We have already said about the Lasagna della Rosy, which is now arriving, and so let’s think about the second one. We lean, happy with the choice, towards La Grande Bazza: 1 kg of Tomahawk of beef matured for 60 days, double breaded and fried. Next to it, almost a side dish, Parma Ham and 36 month Parmigiano Reggiano cream. The Tomahawk is a giant steak, so called because it has a shape reminiscent of a Native American battle axe. The Tomahawk is obtained from the front part of the loin, precisely from the fifth to the first dorsal vertebra up to the neck. In order to maintain the lightness that characterized the entire lunch, the choice of dessert falls on the Gran Barozzi, an exquisite reinterpretation of the Barozzi di Vignola, chocolate cake with artisanal mascarpone cream.

The wine list is extensive and well done. In our glasses, from start to finish, Gran Barozzi cake included, a delicious charmat, made only from Lambrusco Salamino grapes, the Albone made by Il Podere Saliceto. It’s a Lambrusco di Modena Dop, obviously!

Sweet sleep at La Favorita

And Vignola, which has come down to us as the place of origin of cake, is also the name of the room where you stay. The breakfast the next morning was delicious. We set off towards Assisi, all of this in coherence with the vitality of the joyful embrace between immanence and transcendence.
