Novara, the fate of the Cannavacciuolo bistro revealed

The fate of chef Cannavacciuolo’s bistro in Novara has been revealed: the place will change management and will be entrusted to another big name in the sector

The bistro of Antonino Cannavaccioulo management changes in Novara: negotiations with the new company destined to take over are in the home stretch. The restaurant in Piazza Martiri will have new management and a new name: an epochal change for one of the most important businesses in the area.

New management for the Cannavacciuolo bistro in Novara

The official announcement has not yet arrived, but the negotiation, long and complex, would now be in its final stages: to clarify the matter, it was Cinzia Primatestawife of chef Antonino Cannavacciuolo and manager of the family group which boasts restaurants and resorts spread throughout the national territory.

“The Cannavacciuolo bistro in Novara? We are handing over to an excellent restaurateur – the words of Cinzia Primatesta reported by ‘La Stampa’ – we are making the best decision for Novara and if we have not yet communicated it it is because there is nothing definitive”.

The manager, to whom Antonino Cannavacciuolo dedicated the third Michelin star obtained with the Villa Crespi restaurant in Orta San Giulio, also wanted to respond to some criticisms received following the news of the change of management, asking for respect towards those who believed in Novara, investing both from an economic and from a human and professional point of view.

The Cannavacciuolo family, who is about to open a new restaurant at Naples airport, immediately believed in the city of Novara, where the bistro was opened in 2015 following an investment of around two million euros: the sign that both Antonino and Cinzia have always had great consideration for the Novara area, an important stage in all their activities.

The future of the venue

The former mayor of Novara, Massimo Giordano, expressed his concerns about the change of management of the Cannavacciuolo bistro: on Facebook he published a photo showing the closed place, calling it “abandoned”.

The response to the concerns was not long in coming Orta: “Have trust and respect towards those who have invested two million euros to restore a place both from a structural point of view and from an energy and fame point of view, giving so much to the city in almost ten years”.

Many examples have been given of how the Cannavacciuolo chef’s group has supported important but necessary economic efforts for the development of the territory, such as those which have created a synergy between the Bistrot and the Coccia theater: the demolition of the wall that divided it from the theater foyer has become an integral part of the historic Coccia, also merging with modern elements or those reminiscent of the Novara theater itself.

The Cannavacciuolo bistro, with the kitchen entrusted to the chef Vincenzo Manicone, in 2019 it obtained the Michelin star, placing Novara on the map of high-level Piedmontese restaurants. Quality, they assured from Orta, will not be lost under any circumstances with the change of management.

A highly appreciated figure in the restaurant sector should take over the Novara restaurant: there is talk of an adequate profile to take over from the family of Antonino Cannavacciuolo, one of the most followed chefs in Italy.
