White onion from Castrovillari: exhibition of producers and show cooking on Saturday 11 May
of the Cucina Sociale Contadina “Buoni Buoni” at the Campagna Amica market in Cosenza

Amica di Cosenza, in Piazza Matteotti, with the exhibition by the Producers’ Association
of the white onion De.Co. of Castrovillari who, since 2020, has obtained the significant
recognition of the Municipal Name.
Local ecotype of the Allium cepa L. species (Liliaceae family), for its taste and properties
its organoleptic properties have always found great appreciation among consumers, al
to the point of being used until the 1970s also as a commodity for bartering with
dairy products, among the farmers of the area.
The fresh product, which can be sold both as spring onion and onion, is available
almost all year round while when dry, depending on the climatic trend, it is available on average
from early summer to autumn.
The Castrovillari white onion is an extremely sweet onion, characterized by levels
of variable olfactory intensity, with low average pyruvic acid values; characteristics that make it
particularly digestible even if consumed raw.
Its production area once extended along the Coscile river, up to the plain of
Sibari. Today it persists in the territories surrounding the town of Castrovillari and various producers,
with renewed impetus, they are starting to recover this extraordinary biodiversity that is coming
currently cultivated on a total of 18 hectares of land, all cultivated by young entrepreneurs
agricultural workers aged between 20 and 40 years.
As regards its cultivation, the production specification provides for operations
organic crops, with low environmental impact, which allow us to reduce costs and also the
quantity of chemical products released into the environment, guaranteeing the safety and quality of
final product intended for consumption. Its cultivation can thus make it possible to integrate the income of
small farmers and also to create alternative income for new generations of entrepreneurs
agricultural workers in the area.
Much appreciated in restaurants, excellent if caramelised, it also lends itself well to other types
of sweet and sour preparations, or even dehydrated. The white onion of Castrovillari will therefore be
protagonist at the covered market in Cosenza, both on display and on sale among the products
zero km agri-food products grown and guaranteed by the farmers of Campagna Amica, both in the recipes
traditional Calabrian dishes with show cooking by the guys from the Cucina Sociale Contadina del
“Buoni Buoni” market, of the “Volando Oltre” social cooperative of Cosenza. They will be prepared
different recipes of the Calabrian culinary tradition using the raw materials of the farmers of
Campagna Amica market, together with the Cipolla Bianca De.Co. of Castrovillari and the dishes
made will be distributed in free tasting.
