A banquet of taste, aromas, sensations and above all colours, because the doughs will have particular nuances that will make them unique, turmeric, tomato powder, or beetroot for a rainbow of flavours!

And then it special pan: the black of vegetal charcoal, a 40-hour leavening dough with a biga preference, 87% hydration and extraordinary digestibility, seasoned with “red lava” Neapolitan ragù resulting from slow cooking for 8 hours, and the whiteness of stracciatella to cool everything down, in a riot of flavour.

The entire menu Mendozza after all, it talks about Naples, in honor of the chef’s origins, but it is contaminated by creative combinations.
