Claudio Colombo’s panettone made in Barasso is the second best in the world

It was an exciting final that saw the finalists from all over the world parade during the awards ceremony of the Panettone World Cup 2022 which took place in Milan at Palazzo delle Stelline from 4 to 6 November.

BEST TRADITIONAL PANETTONE AWARD
To win the title of best panettone in the world for the traditional Panettone category was the master pastry chef Giuseppe Mascolo (Italy), in second place Claudio Colombo (Italy, of the Pastry Colombo of Barasso and Comerio) and in third place Luca Poncini (Switzerland).

The work of the international jury of traditional Panettone these days has been tightened up under the strict supervision of the notary to judge the panettone by shape, aroma and flavor. Another affirmation for Claudio Colombo, not new to awards of this type for its confectionery creations appreciated throughout the territory. Pasticceria Colombo was born in 1985 in Barasso and then moved to Comerio where a patisserie, café and artisan ice cream parlor with a tea room was born. Parents Roberto and Emilia have passed on to their children Claudio (with his wife Marta), Jessica, Jennifer (with her husband Luca) and Alessio the passion in the name of an entirely artisanal production of the highest quality. In 2017 he opened the Colombo chocolate shop in Barasso, a reference point for lunch breaks, snacks and aperitifs.

MAESTRO DEL PANETTONE AWARD
During the award ceremony, the 2022 Master of Panettone Award was also assigned to Achille Zoia, the undisputed master of dough (shortcrust, leavened, puff pastry) and owner of the Boutique del Dolce. The Pastry Chef boasts thirty years of experience in the field of pastry and teaching and has contributed to creating the history of Panettone in the world, not surprisingly his was named Panettone Paradiso. Son of art, he begins to approach the profession while still a child next to his father and uncle with whom he arrives at the famous Biffi pastry shop in Milan. In 1998-1999 he received the recognition of Pastry Chef of the Year conferred by the Academy of Italian Pastry Masters.

BEST INTERNATIONAL CMP CLUB
The best international club award went to the Brazilian one for organizing the national selections that took place in San Palo. Rogerio Shimura Master Baker and Director of the Levain Escola de Panificação in Sao Paulo was awarded.

NOVACART ART CAPSULE COLLECTION AWARD
Great success also for the first edition of the Novacart Art Capsule Collection Competition, which the contest open to artists, creatives, students and designers is aimed at creating the packaging of the winning panettone of the third edition of the
Panettone World Cup.

BEST VIDEO AWARD
The award for the best video of the pastry chefs made to tell the workshop, the work, the passion went ex equo to Stefano Ferrante and Andreide Borba.

After a year of national selections in the various states, for the 2022 edition 24 pastry chefs for the Traditional Panettone category and 18 for the Chocolate Panettone category arrived in the final. The finalists come from Europe, Asia, Latin America and States
United but also Australia and, for the first time, from Africa, demonstrating the increasingly international appeal of this project.

During the event, the Panettone Academy Award was presented, the only biennial international competition promoted by the Maestro Martino Association exclusively dedicated to schools and academies around the world, aimed at promoting panettone internationally through future generations of chefs and pastry chefs.

THE WORLD CUP OF PANETTONE
The Panettone World Cup is the great international event entirely dedicated to leavened products par excellence. It was created to celebrate the history and processing of a product capable of crossing the borders of origin to establish itself on the world confectionery scene. Patron of the event is Maestro Giuseppe Piffaretti; the first edition took place in Lugano from 8 to 10 November 2019; the second edition from 5 to 7 November 2021. In addition to the competition, the event promotes demonstrations, tastings, visits to exhibitors, laboratories, workshops to celebrate the history and processing of a product that has managed to cross the borders of origin and seasonality to establish itself on the world confectionery scene. Panettone World Cup is organized in collaboration with the Maestro Martino Association and with the contribution of the Lombardy Region and the patronage of the Municipality of Milan, Confcommercio Milano, Lodi, Monza and Brianza.
