According to Crefis analyses, the ratings of most cuts of pork began to rise again over the past month

In May the trend in profitability of the manufacturing sector was favourable slaughter swine Italian. In fact, there has been an increase in prices, both on a cyclical level (+3.6%) and on a trend level (+8.9%). This is thanks to the lower purchase cost of slaughter animals which compensated for the negative trend of the cutting market. Going into detail, fresh legs intended for typical production, in May, suffered a drop in price of 2.3% compared to the previous month, falling to 5.865 euros per kilo (the trend variation is also -1.4%). The prices of fresh legs intended for non-typical production are also decreasing: 4.475 euros/kg the value for a monthly variation of -5.3% (-12.1% trend variation). As regards loins, however, the market situation is heterogeneous: the price of the Padova cut fell by 5.3%, for a value of 4.425 euros/kg, while the Bologna cut showed a positive cyclical variation of 3.5 %, for a value of 4.475 euros/kg. The trend changes were positive and respectively: +4.7% and +13.3%.

Ham, steady-state price trend in May

Also in May, the seasoning shows an unfavorable trend for the prices of the PDO product and a substantially stable figure for the hams not protected. More precisely, Parma ham aged for 12 months recorded a monthly decrease in price of 0.4% to a value of 10.46 euros/kg (-2.2% trend change) while the price of generic ham is remained stable at 8,600 euro/kg while maintaining a positive comparison with last year’s values ​​(+4.2%). The profitability of the heavy DOP product aged for 12 months grows by 0.2% on an economic basis; in May even non-protected ham showed a profitability index rising by 0.7% month on month and by 2.1% on an annual basis. The profitability gap between the two products still remains in favor of the DOP +2.1%.
