Ingredients:
500 g of flour
250 g of potatoes
25 g of fresh brewer’s yeast
15 g of sugar
50 g of butter
100 ml of milk
juice of half an orange
lemon and orange peel
a pinch of salt
peanut oil for frying
Method
After boiling the potatoes in plenty of water, mash them until they become puree.
Arrange the flour in a well and create a well in which to place the mashed potatoes, which should be just lukewarm.
Add the sugar, the grated orange and lemon peel, the orange juice and the milk in which you have previously dissolved the yeast and begin to incorporate the flour, working the ingredients well until you obtain a homogeneous mixture. Cover with cling film and leave to rest for about two hours. After that, take the dough again, manipulate it again, taking a small piece at a time, forming the donuts that are not too large.
Once the donuts have been prepared, heat the oil in a pan and immerse a few donuts at a time until they have reached a nice golden color on both sides. Drain them and place them on absorbent paper suitable for frying. Once cooled, pass them in sugar.
