“The profession in the kitchen becomes art”, Pietro Zito’s cooking show in Bisceglie – BisceglieLive.it

The combination of cuisine and tradition is what makes Apulian gastronomy unique. Each dish retains within it the flavors and smells of the past and this is the reason why, despite the great innovation in the sector, many chefs prefer to follow and enhance old recipes, thus bringing out the peculiarities of the territory. This is the case of Pietro Zito, the owner of Antichi Sapori di Montegrosso, in the village of Andria, an inn that has not forgotten traditions and habits for thirty years. The “chef-farmer” is the demonstration of how the transformation of native products can have a significant impact on the food, wine and economic tourism fabric of the area. And Zito will be the guest of the new event of “Ri-CostruiAmo il Territo”, the campaign to raise awareness and valorise the culture of culinary traditions, scheduled today, Wednesday 19 June, at 6.30pm at the Castello Svevo Angioino in Bisceglie (Largo Castello ).

During the evening, entitled “The profession in the kitchen becomes art”, around 7.15pm there will also be a cooking show by Pietro Zito who, in addition to introducing his latest book “There is an outside and there is an inside ” and to talk about his project “Ancient Flavors for young chefs”, he will prepare authentic local dishes together with chef Carlo Papagni. There is also plenty of space for the Bisceglie focaccia “u cùcue”, a culinary specialty that deserves to be included in the PAT, the traditional Italian agri-food products.

At the meeting, organized by the Cooking Solution association and by
AssoLocali with the patronage of the Puglia Region, the Municipality of Bisceglie and the Pro Loco, various actors from the entrepreneurial and political fabric of the area will intervene, as well as operators from the tourism and food and wine sectors. Everyone with their own experiences, skills and testimonies will promote the territory by networking and explaining how to achieve important results, what interventions the territory requires and how the school can transmit the basis for enhancing an area rich in resources.

The event will open with greetings from the mayor of the Municipality of Bisceglie, Angelantonio Angarano, and will see speeches from the president of the Pro Loco of Bisceglie, Pierpaolo Sinigaglia, the vice president of Cooking Solution, Giuseppe Frizzale, and the president of AssoLocali, Andrea Ferrante.

The aim of the event, moderated by the gastronomy journalist, Sandro Romano, is to enhance the authenticity of the territory by networking between producers, sector professionals and institutions.
