VITERBO – Last day to taste the flavors of the world presented at the street food fair in the central Via Marconi. Pans, skewers, grills and piping bags, working to satisfy everyone’s tastes, from sweet to savory.

Among the confirmations we find the Sardinian porceddi that “go around” in Piazza della Repubblica at the “Sapori typical di Sardegna” counter, one of the most popular, and the Neapolitan fried pizza with its romantic story made of post-war sacrifices, when the ingredients were scarce and the wood-fired ovens had been destroyed, hence the ploy of frying the dough and filling it with what one had at home, friarelli and pork cracklings, pieces of fat discarded from the finest cuts.
