“The best sushi in Italy is in Prato”

Not just textiles for Prato which reaches the peak of excellence once again thanks to the sushi of Francesco Preite, a native of Prato with a passion for cooking and raw fish. The list drawn up by the prestigious Gambero Rosso magazine leaves no doubt. In the new edition of the Sushi Guide 2025, presented in Rome on the eve of ‘Sushi Day’, this varied gastronomic universe is illustrated between sushi bars, fusion establishments, fine dining, taverns, take-aways and delivery. The guide selects 223 addresses that have invested in quality and innovation, including authentic flavors, but also more modern influences, for an increasingly popular food that continues to attract new consumers. “In this volume there are many stories of love for Japanese culture, stories of Japanese who wanted to pass on to our country the great gastronomic heritage of which they are witnesses and stories of Italians, struck by the charm of the cuisine of the Land of the Rising Sun. Our selection seeks to highlight experiences of excellence centered around sushi”, explains Pina Sozio, editor of the Guide which also awards 13 special prizes.

There are 32 ‘Three chopsticks’, establishments that offer the best sushi options throughout the country and as far as Tuscany is concerned, the only restaurant to win the most important recognition is the Moi Omakase in viale Piave, opened in a excellence right in front of the Emperor’s Castle. Only 10 seats around the counter of Moi Omakase which offers more than a dinner, a real tasting and technical experience to be enjoyed together with a select few other diners.
