Fano, special evenings for the “Fuori Brodetto”

Fano.- The passion for the ancient traditional seafood dish continues with the ‘Special Evenings’ of Brodetto outthe BrodettoFest initiative promoted by Confesercenti, the Federation of Restaurateurs, the Chamber of Commerce, the Municipality of Fano and the Marche Region, until 30 June in 21 restaurants in Fano, every day of the week, with special menus based on brodetto, each with their own version of the famous soup and a 20% discounted price. At the end of the entire event, a technical jury of gastronomes, experts and enthusiasts, led by chef Lucio Pompili, will test all the participating restaurants and select the winner.

Thursday June 13th, The Baretto (Via del Moletto – Tel.: 3284783417) by Federico Marchetti known as Pet and in the kitchen chef Andrea Uguccioni offers the original version of the Fano navy, as well as with poor fish, the one eaten on board fishing boats. There are also variations on the table for those who don’t like thorns. The ingredients: cuttlefish, nocchia, rosciolo, red mullet, mazzola, sole, ray, cagnolo, weever, scorpion fish and others. “It’s a sensual dish – says the chef – and so good you’ll lick your chops and fingers, plus you can dip the bread in it until the end. The real satisfaction is when the plate returns completely clean to the kitchen!
Friday June 14th special evening at Porto coffee (Via Nazzario Sauro, 270 Tel.: 0721-804579), winners of the last edition with the brodetto by chef Marco Pitrolo. Creativity and fresh fish from our sea are the ingredients of the restaurant Simone Serfilippi and of Stefania Palazzinithey make the broth ‘our way’, a personalized creation of the original recipe, especially with boneless fish and tomato sauce.

Saturday June 15 In the Da Santin restaurant of the owner Stefano Gaggia (V.le Adriatico,80 – Tel.: 0721-805507) traditional Fano broth is served with only fresh fish, based on the catch of the day. Here tradition reigns, rigorously respected even in the preparation, step by step, dosing the ingredients wisely for an absolutely tasty final result.

Monday June 17th to the Il Gattopardo Restaurant (Via dei Giorgi Fano – Tel.: 0721-806962). The owner and chef Franco Petrolati he has always prepared the sauté with oil, garlic, onion and wine, adding shellfish and cuttlefish to the pan followed by the tomato and all the other types of fish: dogfish, skate, monkfish, spiders, possums, and other minor fish with plugs such as sea bream, based on the catch or what is on the market.
