ANCONA – Food Cost, fight against food waste, training, room management and company efficiency, but also work, new contract for public establishments and new law on Marche menus: these are the topics at the center of the second edition of the “Marche Catering Forum”, event organized by Confcommercio Marche and Fipe Confcommercio (Italian Federation of Public Businesses). The appointment is for Thursday 16 May in the Aula Magna of the Faculty of Agriculture of the Polytechnic University of Marche Ancona, starting from 9.30 am, with a program full of interventions on issues related to the development of catering. Among the many guests expected, the entrepreneur stands out Roberto Costa: founder of the “Macellaio RC” chain, Knight of the Order of the Star of Italy, awarded as The Best Restaurant Owner in London and the first Genoese Gourmet Ambassador in the world, will tell how cost analysis and training have been and continue to be the drivers of its success. He will retrace the stages of his entrepreneurial growth, telling how, starting from scratch, great results can be achieved by correctly calculating the margins on the plates. Costa’s contribution will be the focus of the Case History entitled “RC Group and contemporary scenarios for catering”, while the moderator will be the Managing Director of “Sala&Cucina”, author of numerous books on food and wine and food and wine tourism, Luigi Franchi.

The Marche Catering Forum will open with institutional greetings, including that of the Mayor of Ancona, Daniele Silvetti, of the President of the Single Chamber of Commerce of the Marche, Gino Sabatiniof the Director of the Department of Agricultural, Food and Environmental Sciences UNIVPM Davide Neri and the President of Confcommercio Marche, Giacomo Bramucci. Finally, the heart of the event will be the round table, entitled “Not only artists but catering entrepreneurs”, moderated and introduced by the Rector of the Polytechnic University of Marche Gian Luca Gregori, with a report entitled “An innovative entrepreneurial approach: a new business model”. It will be a varied and stimulating round table, in which the various souls of national catering will be present. Among the interventions there will be Mariella Organi, elected in 2016 by Identità Golose Best Dining Room Woman, Best Room Service for Gambero Rosso, Best Maitre for the Espresso Guides, Restaurant Manager of La Madonnina del Pescatore in Senigallia.

Her success story was also celebrated in the program Femmes en vue de Les Grandes Tables du Monde. With the occasion of the imminent renewal of the collective agreement for public establishments, the Dr. Silvio Moretti will carry out an in-depth analysis of the employment contract and its potential and opportunities. Silvio Moretti is Senior Consultant of the FIPE Confcommercio Trade Union Relations and Training Area, in which area he held the role of Director until last year. In this capacity, he has followed the renewals of the sector’s National Collective Labor Agreement over the last thirty years. They will also intervene Luca Santini, President of the Marche Regional Chefs Union and professor of the hotel school, Deborah Pacetti, President of the UNIVPM study course “Food and Beverage Innovation and Management” e Mario Di Remigio, Restaurateur and President of FIPE Confcommercio Pesaro and Urbino. Among the participants in the round table also the Prof. Massimiliano Polacco, General Director of Confcommercio Marche, who expressed enthusiasm for the initiative which will be the launch pad for Catering Day: «It is an initiative that enhances and promotes the art of conviviality and the culture of hospitality. A moment of sharing between restaurateurs in Italy and abroad, to celebrate the profound values ​​of Italian catering.”

Subsequently, the President of the Marche Region Council Francesco Acquaroli will introduce the live connection with the national press conference of Fipe Confcommercio at Palazzo Montecitorio on “Catering Day” in the presence of the President of the Chamber of Deputies Hon. Lorenzo Fontana, of the Vice President of the Council of Ministers and Minister of Foreign Affairs and International Cooperation Hon. Antonio Tajani, of the Minister of Agriculture, Food Sovereignty and Forestry Hon. Francesco Lollobrigida, of the Minister of Business and Made in Italy Sen. Adolfo Urso, in addition to other state authorities and national representatives of the catering sector. The conclusion of the works will instead be entrusted to the Councilor for Economic Development of the Marche Region Andrea Maria Antonini, which, on this occasion, will present and illustrate a new regional law.
