In the week from 6 to 10 May in school canteens Olbia there will be a typical day with the Gallura soup, a dish of peasant origin, which falls within the definition of a poor dish, but which is poor it has very little.

The plan of food education for the school canteens of Olbia promoted by the municipal administration provides for the diffusion and safeguarding of the cultural and culinary traditions of the area, through the re-appropriation of the regional food heritage.

“The project intends to involve, with differentiated proposals and actionspupils, teachers and parents – states the councilor for public education Sabrina Serra -.For a good, healthy and sustainable school canteen there is a need to develop skills and a culture of good food linked to our tradition and the protection of the environment and resources. With these initiatives we want to dedicate meal time at school to rediscovery of traditions and ancient flavors. The typical product is the product of a place, which jealously guards the links with its origins and history”.

Even in the tradition of Sardinian cuisine, as often happens with its dialects, the Gallura soup has numerous local variations that change from city to city. Among the numerous variations there are some where instead of stale bread Spianata or carasau bread is used. By moving a few kilometres, variations are made which, whilst not distorting the basic recipe, do add easy features to be grasped at the first taste. In Tempio the bottom of the pan was lined with thin slices of lard, for example Add in the suppa cuata of weddings, a ghisaddu of red veal is added, as soon as it comes out of the oven; in Monti it is not cooked in the oven but with the flame of the stove; to Bortigiadasa border town, wild fennel is used as in nearby Anglona.

According to some origins of the soup they date back to the end of the eighteenth century, naturally in Gallura, at the time sparsely populated, inaccessible and dedicated to cattle breeding. The first flocks of sheep they will appear in fact only a century later
