On the eve of «Cibus», the 31 Friulian San Daniele PDO ham companies renewed their management teams. Nicola Martelli was elected new president

The cat goes to the lard anyway… it leaves its paw in us, says an ancient popular proverb.
In our case the zampino is nothing other than the distinctive element of one of the most famous and exclusive hams made in Italy: San Daniele del Friuli ham.
A hard-working city which, after the disastrous earthquake of 1976, faced with great spirit of sacrifice and civil commitment the difficult work of reconstructing the housing, as well as the social and economic fabric, deserving the gold medal for civil valor.

A commitment that involved, in particular, the 31 companies in the ham supply chain and the managers of the San Daniele DOP Prosciutto Consortium which just on the eve of Cibus (it will open its doors next Tuesday 7 May in Parma) renewed its management teams. The Board of Directors has, in fact, appointed Nicola Martelli as the new president of the Consortium.
Martelli, 45 years old, CEO of the Martelli company, succeeds Giuseppe Villani, president since 2015, and will remain in office for the next three years.

San Daniele, an example of sustainability and high quality for Italian delicatessen
«It is a great honor and a great responsibility to receive the task of representing the Board of Directors and all the producers of Prosciutto di San Daniele, – declared the new president Nicola Martelli. – A commitment that I face with enthusiasm and passion.
«I have a lot of respect for this unique product, for the territory and for the people who produce it. San Daniele Ham is, and must be, an example of sustainability and high quality for all Italian delicatessen.
«Many commitments await us, but I am sure that by placing the quality of San Daniele DOP at the center we will be able to achieve the objectives we have set.»

The new Board of Directors is composed not only of the president, but also of the directors Stefano Aimaretti, Lorenzo Bagatto, Erika Bassi, Angelo Coradazzi, Tiziano Ferrarini, Claudio Palladi and Marco Pulici.
The Council also designated the two vice-presidents Lorenzo Bagatto and Marco Pulici, the latter with deputy functions, and also appointed the two members of the “Supply chain management commission” for the ham factory component for the three-year period 2024-2026: Stefano Aimaretti and Claudio Palladi.
The latter was appointed president of the same Commission.

In 2023 two and a half million legs and 21 million trays will be produced
The producers’ assembly also approved last year’s budget and analyzed the performance of the sector during 2023.
The total production of San Daniele DOP was over 2,590,000 legs sent for processing with a total turnover of 360 million euros. The number of pre-sliced ​​San Daniele ham trays exceeded 21.3 million certified packages, equal to 407,000 hams (+1% compared to the previous year), for a total of over 2 million kilograms, confirming itself as a consolidated trend in line with new consumption methods.

Exports: France, United States, Australia, Germany and Belgium in first place
The export share in 2023 recorded growth and stood at 19% compared to total sales with approximately 3 million kilograms directed to the market outside Italy.
55% of the total export quotas were destined for the European Union, while the remaining 45% were exported to third countries.
The countries that hold the most significant share for the export of Prosciutto di San Daniele DOP are confirmed in order of volumes: France, United States, Australia, Germany and Belgium.
The other main foreign target markets are Switzerland, Austria, the United Kingdom, Luxembourg and Canada.
In 2023, excellent performances were recorded, in order of exported volume, for the United States (+11%), Australia (+7%), the United Kingdom (+30%) and the Czech Republic (+18%).
