The Priamar bar-restaurant is unable to find entrepreneurs interested in investing in the reopening and even the third tender called by the Municipality last April was unsuccessful. It wasn’t enough for Palazzo Sisto to set up the restaurant’s kitchen (with an investment of 40 thousand euros) to make the tender more interesting for potential managers.
The Municipality is thus trying to look for new managers for the structure, resetting the specifications based on some changes made to the requirements and expected commitments, “to make the tender as open and interesting as possible for the operators present on the market” and will invite five operators to participate in the procedure.
Here’s what the Municipality asks of those who want to manage the Priamar bar-restaurant. The service will have to start from May 2025; there is an obligation of 8 hours of daily opening from 25 April to 30 October, with the possibility of agreeing on any temporary changes to the opening times based on objective conditions to be evaluated, providing that the opening of the bar is guaranteed on all occasions in which there are both public and private initiatives within the Fortress, at the request of the Administration. During the summer period, evening opening must always be guaranteed with times to be agreed and with the possibility of subcontracting the catering service.
The concession has a duration of 6 years with the right to renew for a further 6 years upon evaluation by the administration. The value of the concession is estimated at 25,000 euros per year (excluding VAT), for a total of 125,000 euros, 275,000 considering the renewal of the concession for another six years. The figure was evaluated on the historical number of catering and services of the outgoing company.
