LAWN – A menu that evokes the most authentic flavors of the best Prato food and wine tradition, with a nod to innovation. This is what will characterize the next edition of Tuscany in your mouthin Prato, at the Emperor’s Castle, Friday 7th (ribbon cutting at 6.30 pm) and Saturday 8th June.

The special guest, on the evening of June 7th, will be him chef Cristiano Tomei. The event, which will bring together 16 of the best restaurateurs, pastry chefs and expert oenologists from Prato and Pistoia, is promoted by Confcommercio and Fipe Pistoia and Prato in the context of Eat Pratowith the contribution of Chamber of Commerce of Pistoia and Prato and fits into the circuit of Tuscany showcasethe Region’s food and wine tourism project aimed at enhancing quality catering, through a network capable of ensuring great resonance for all the activities involved.

The event, like a year ago, will act as preview at Arcobaleno d’Estatethe program of events – from 19 to 25 June – promoted by the Tuscany Region together with La Nazione with the support of Toscana Promozione Turistica, Fondazione Sistema Toscana and Vetrina Toscana and with the participation of trade associations, to celebrate the start of the season tourist.

The menu of this first edition – which comes after the success of the pilot edition a year ago and following the large public participation recorded at the Cathedral of Pistoia, within the same format – will be very rich.

It will range from elaborate first courses, such as paccheri filled with Valbisenzio ricotta or tortelli filled with duck, to meat first courses that pay homage to the Prato tradition, such as Calvanina meat that meets Prato-style celery or croaker tartare with celery tartlet. Until we get to the fish, with the octopus cacciucco, and without forgetting the pizza, fried and toasted in the oven with lemon ricotta and Prato mortadella.

This year, the historic ingredients of the area will also be enhanced by the bread and Schiacciata made available by Forno Mangiapane, other typical specialties of these areas. Among the pastry shops present, the biggest novelty is undoubtedly the one brought by Prato peach that becomes chocolate: Paolo Sacchetti, of Pasticceria Nuovo Mondo, thought of this new variation after a trip to Mexico, on the route of the prized Criollo Cacao.

The food will be accompanied by cocktails made available by Le Barrique, while the wines will be those of the Carmignano wine route and the typical flavors of Pratesi.
