Parma ham: the Parsutt project wins the Eip-Agri innovation award

Parma – Important recognition for the Parma Ham Consortium. The project Parsutt (PARma ham high SUsTainability standard), coordinated by the Animal Production Research Center – CRPA of Reggio Emilia, with the direct participation of the Consortium and in collaboration with the University of Milan, wins the Eip-Agri innovation awardor the European network established in 2012 to promote research and innovation in the agricultural sector.

The project was recognized as having a high degree of innovation for the practices and solutions proposed, aimed at outlining a virtuous pig production chain model within the scope of Prosciutto di Parma PDO, with particular attention paid to the breeding phase. Through the analysis of international standards and the involvement of over 100 stakeholders and 25 international scientific experts, an innovative protocol based on 23 parameters was developed with animal welfare and biosafety standards higher than those imposed by current legislation, which is made available of all links in the supply chain. Who can apply it on a voluntary basis. The essential elements of the protocol include particular attention to well-being of sows during gestation and maternity, post-weaning piglets and fattening pigs. They include the availability of rearing spaces above the legal minimum, comfortable and spacious resting surfaces, and a greater quantity of straw and other fibrous materials.
