The Consortium of the queen of Italian dairy products has decided to create, in collaboration with theItalian sommelier associationjust an ad hoc guide.
“Buffalo & Wine in love”, this is the title of the volume, will be officially presented on May 18th in Caserta, but a rich first preview was organized on the occasion of Cibusthe international food exhibition underway in Parmawhere the Consortium is present with a stand, an event space and also with dozens of information panels along the entire perimeter of the exhibition area.
«Cibus is a unique global showcase of excellent Italian products and we have always believed in this event – he underlines Domenico Raimondo, president of the Consortium for the protection of buffalo mozzarella from Campania DOP – For this reason we also decided to present a preview of this new guide, created almost for fun but also at the request of the many lovers of our mozzarella who asked us for new ideas for enjoying our products ». A work that began a year ago with all the Italian AIS entities, almost 40 thousand members, who received the Consortium’s products and began the search for the best denominations that could be combined with the two versions of mozzarella. «In the end we thus arrived at 110 denominations with a common thread which is territoriality, and that is to enhance the idea of the supply chain as it is for buffalo mozzarella from Campania», he explains Thomas Luongopresident of AIS Campania.
