Piacenza asparagus is the protagonist in the restaurants of the province. The exhibition dedicated to the spring vegetable par excellence is back. The participating restaurants offer dishes, or entire menus, prepared with asparagus purchased from the members of the Protection Consortium. The 2024 edition of the Piacenza Asparagus Exhibition was presented at the headquarters of the Piacenza Traders Union. It is an initiative promoted by the Piacenza Asparagus Consortium and by FIPE-Confcommercio Piacenza to best enhance one of the excellences of the our territory. As has already been the case for about ten years, the spring vegetable will become part of the menus of some selected restaurants in our province until May 16th. Given the versatility of asparagus, the possibility of interpreting it as a starter, as a first course, as a second course and, why not, even as a dessert will be left to the inventiveness of the individual chef.
The president of FIPE-Confcommercio Piacenza, Roberto Carbonetti, recalled how the collaboration between the Strada Bobbiese association and the asparagus producers is now more than consolidated and has seen, over the years, an increase in the number and level of the restaurateurs involved. Excellent chefs for a product that is grown in our lands, not aiming at mass production but at the highest possible quality. The asparagus offered in the restaurants participating in the initiative are all purchased from producers who are members of the consortium (currently around fifteen), most of whom also sell directly to the public. Growers who wanted to come together to protect the Piacenza asparagus but also to promote it in the best way, giving it a strong identity and a very clear distinctive image, starting from the band that wraps the bunches. The many dishes that arise thanks to the inventiveness of the restaurateurs of Fipe-Confcommercio become in turn a perfect promotional vehicle and offer ideas to consumers, not only from Piacenza, also through social media which relaunches all the menu proposals.
Furthermore, this year there will be some additional innovations compared to the past, starting with a large closing event which will see the involvement of the consortium members, restaurateurs and Confcommercio representatives; they will meet together to seal the conclusion of the event. The second innovation was illustrated during the press conference by Luigi Bisi, representing the Protection Consortium. For the first time, in collaboration with the Accademia della Cucina Piacentina, at the beginning of May, a culinary competition for non-professional chefs entitled “Silver Asparagus” will be offered. The challenge will be divided into two evenings during each of which four cooking enthusiasts will propose a dish obviously based on asparagus. The best among the eight competitors will be rewarded with a valuable silver spoon which will also become the symbol of this culinary “single combat” in the future. Returning to the actual gastronomic event, the Asparagus Consortium and FIPE Confcommercio remain open to welcoming any new members of restaurants that wish to join, perhaps next year, bringing their experience and ability to process asparagus made in Piacenza.
