IAL Lombardia collaborates with Carlo Cracco’s cooking school for Young Talents

LEGNANO – On the occasion of the Milan Design Week, the official presentation of the Young Talents project which sees the IAL-Innovation learning work Lombardy educational partner of Maestro Martino Food Academy. The event was attended by students from the Saronno and Legnano campuses who, accompanied by tutors and teachers, had the opportunity to attend one of the Fuorisalone events with the artistic performance of @paolotroilo54.

The glueboration with the Academy directed by Massimo De Maria and promoted by Carlo Cracco (pictured abovein the center) was born thanks to the unity of intent and values: innovation, care for the new generations, passion for professional training. The partnership began with the educational-experimental laboratory “the perfect brioche” starring some students: Dario De Felice, Beatrice Pontonio And Mattia Russo. The three young talents have been selected to train within the prestigious academy for three months: a full immersion in which they will be able to learn, experiment and grow alongside as many young catering professionals.

«In the evening before going to sleep – says Dario, third year student – ​​I think back to the productions I have started and in the morning I wake up to check that everything is perfect. There is a lot of sacrifice and studybut the pleasure of seeing customers savor our products is a priceless emotion.” The laboratories are the beating heart of this project and Beatrice, a second year student, is experiencing them to the full: «I feel happy there, I feel that my passion is satisfied».

The students integrated perfectly into the process of producing bread and other leavened products, which are then produced served at the Villa Terzaghi restaurant and at the Tog Bistrot, a restaurant concept that combines cuisine, inclusion and young generations, always with the signature of the famous chef. What motivates these teenagers is the vision of the future: Mattia dreams of a future as an entrepreneur, he wants to lead his own team and feels that this experience will help him. «When I told my friends that I would participate in this project, I also felt a little important».

Increasingly rich training offer

There is a guide next to them Francesca Callegari, former student of the IAL Lombardia of Saronno, pastry teacher, winner of the Sigep Giovani in the 2020 and 2024 editions and now project leader of Giovani Talenti. «For me, being a trainer means, today more than ever, having the great power and great responsibility of helping young people chase their dreams. My great challenge is to make my profession attractive and loved despite the great sacrifice it entails.”

Being educational partners of Maestro Martino Food Academy will enrich the training offer of IAL Lombardia: the objectives for the coming months are the Summer Camp 2024, new teaching modules and a real master’s degree for the training of catering professionals. For the CEO Matteo Berlanda «our commitment is rework the narrative for students choosing vocational school. Our students do something more than others. They know determination from a very young age, they know what they want to do and they orient themselves day after day on the job market. They experience a dynamism that other peers do not have: events, demonstrations, collaborations, internships in Italy and abroad are an integral part of the path since the second year of training. Finally, they have the opportunity to experience and create beauty through manual skill and craftsmanship.”
