Today we will prepare the lactose-free and super-light potato cake together, even I digested it in a flash.

The recipe I am about to suggest includes some small variations to the traditional one, a necessary change to make this dish suitable for my husband who has problems related to lactose intolerance.

To prevent him from having problems related to discomfort, given that lactose intolerance leads to flatulence, stomach discomfort and much more… I decided to give you a big surprise by preparing the lactose-free potato cake, but in the end it turned out so good that I tried it too.

Lactose-free potato cake recipe

This is a recipe that we will prepare really easily, this does not differ from the traditional one but we just have to adapt the ingredients to make it suitable for those with lactose intolerance or allergies.

Here is the recipe for 4 people for lactose-free potato cake:

A kilo of potatoes,

200 g of grana padano (a cheese that in itself does not have lactose),

200 g of lactose-free ham,

150 g of breadcrumbs,

3 knobs of margarine,

Salt,

3 tablespoons of oil,

Origan.

Let’s prepare our potato cake together

As you will have read in the list of ingredients we will use parmesan for the our recipethis is in fact a cheese that does not contain lactose, as well as a consequence that comes from the cheesemaking process which in the first 48 hours following milk processing is fermented by the microbiota of lactic bacteria.

So let’s proceed with the preparation of our dish: boil the potatoes for at least 40 minutes, the time will be determined in its size so always check the fork to verify that they are boiled perfectly. Then, once ready, wait a few seconds to remove the peel, then with the help of a potato masher, mash them quite roughly, it will not be necessary to puree them.

Now all we have to do is insert the parmesan, breadcrumbs, three tablespoons of oil, two knobs of margarine, salt, oregano and even the cooked ham into the dough. We work the dough until we have obtained a homogeneous and compact mixture which will be shaped inside a pan. When it is completed I advise you to add a sprinkling of breadcrumbs and the last knob of margarine to the surface to make it even more succulent. as long as it is lactose-free.
