The Capocollo of Martina Franca between promotion and valorisation. The meeting of the GAL Valle d’Itria next May 24th in c.da Figazzano:
The series of meetings that the GAL Valle d’Itria has been organizing for several months to talk about the most important local agri-food supply chains has come to life. After figs and fioroni, the olive and wine production chain, ancient grains and carob (to name a few), on Friday 24 May starting from 6.30 pm at the operational headquarters of the GAL Valle d’Itria in the Figazzano district it will be the turn of the Capocollo of Martina Franca, production of excellence for which the process to obtain recognition of the Protected Geographical Indication mark has been underway for some time.
To delve deeper into the topic, Francesco Carriero, food technologist of Salumi Martina Franca Srl and Giuseppe Santoro, President of the PGI Capocollo Association of Martina Franca will be present.
“Food is culture due to its intrinsic ability to preserve local traditions and pass them on to new generations, revealing the true identity of a territory through the sense of taste – declared the President of the GAL, Giannicola D’Amico – Those who live in Valle d’Amico ‘Itria knows what we are talking about by quoting the Capocollo of Martina Franca, but how many know the importance of promoting, enhancing and protecting this resource? Hence the idea of holding a meeting dedicated to this typical cured meat.”
The initiative is financed under the PSR Puglia 2014/2022 Measure 19.2 Support for the execution of interventions within the participatory Local Development strategy of the GAL Valle d’Itria – Action 9 intervention 1 “The agri-food chains between production , transformation and marketing: information meetings”.
