After a long apprenticeship around Italy as a room manager in 4 and 5 star hotels, Valentino returns to Puglia and is hired as Maitre di Sala at the famous Masseria “Moreno estate” of Brindisi, the same structure awarded the tender which will have the burden and honor of serving at the Swabian Castle the G7 inaugural dinner in Brindisi.

Our Valentino will support the secretary of the Presidency Domenico Santamaria and will offer his precious professional contribution in the room where Heads of State from all over the world will sit.

The menu includes an appetizer with scorpion fish, dried cherry tomatoes and aromatic herbs, accompanied by barattieri and fiaschetto cherry tomatoes from Torre Guaceto.

The second course will be “partly a tribute to Italian cuisine: tortelli filled with gurnard, then fish, with julienne of smoked bluefish”.
