Special dishes dedicated to the various countries participating in the Biennale. The initiative is from Hostaria Bacanera, a restaurant with around thirty seats inside and the same number outside in a hidden square in Cannaregio off the beaten track.

“Foreigners everywhere” is the theme of the 2024 Biennale curated by Adriano Pedrosa, to describe the contemporary world “full of multifaceted crises, which concern the movement and existence of people within countries, nations, territories and borders, expressing differences and disparities conditioned by identity, citizenship, race, gender, sexuality, freedom and wealth.”

In Cannaregio, where various exhibitions can be visited, including Grand Hotel by Ydessa Hendeles and The Spirits of Maritime Crossing, the journey to discover the “different” continues among the flavors and original combinations of chef Alessandro Tronconi at the Hostaria Bocanera, which offers a varied offer of seasonal dishes, from fish from the Rialto market to first fruits and wild herbs from Sant’Erasmo.

As a tribute to the reopening of the Ukrainian Pavilion, we find for example the Venice-Kiev Borsch, a beetroot soup with creamed cod and wine must reduction. And the Varenyki, fish ravioli sautéed in a lemon and spring onion sauce, served with salmon roe. For the months of May and June the culinary offering is inspired by dishes from Chile, Great Britain, Turkey, Nigeria, Albania, Peru, Bangladesh and Austria.

The transformation into Hostaria Bacanera, already home to the Cannaregio prisons in the 16th century, then a blacksmith shop, gym, and bacaro tavern in 2018, is due to the intuition of Marcello Forti, gourmand entrepreneur, owner of the Stendhal restaurant in the historic center of Milan , of the Osteria di Brera, soon to open in Rome in the Galleria Alberto Sordi.

Hosteria Bacanera is therefore the ideal restaurant for those who want to experience the most authentic Venice, through the suggestions of art, design and gastronomic tradition. A Venetian tavern that goes beyond traditional “cicheti” and aperitifs.

The restaurant room is enriched by the inlaid counter made from an ancient wardrobe, the piano, the gilded mirrors and a cardinal red sofa. On the walls are two portraits from the school of Tintoretto, from the 16th and 17th centuries respectively, which depict the Prosecutors of San Marco, the most important position during the Serenissima, hierarchically immediately after the Doge. Outside, in the small square where the terrace is set up, there is the Bagolaro tree with black berries, which gives its name to the restaurant.
