how to make Postman’s spaghetti

We present to you the spaghetti prepared by Troisi in his famous (and last) masterpiece also set in Sicily. An easy to prepare and delicious first course

They are known as “postman’s spaghetti” or Mario Ruoppolo style, from the name of the protagonist of Massimo Troisi’s famous masterpiece.

Among the many (exciting) scenes of the Neapolitan director’s latest masterpiece, we propose again the one in which the postman Mario, played by Troisi, to remember his poet friend, Pablo Neruda, now distant, decides to prepare his favorite dish: the spaghetti with artichoke sauce.

“Il Postino” was filmed between the island of Procida (Naples) and Salina, Sicily. The scene is set in an inn in Sicily, from which the recipe was borrowed.

“Postman’s spaghetti” is an easy, quick and delicious first course.

Just a few ingredients are enough: tomato, garlic, basil and, of course, artichokes. The original recipe includes fresh artichokes and tomatoes but, if you are short on time, you can use frozen artichokes and peeled tomatoes.

Ingredients
500 g of spaghetti
artichokes (fresh or frozen)
400 g of ripe or peeled tomatoes
1 clove of garlic
extra virgin olive oil
fresh basil
fresh parsley
salt
pepper

Method
Clean the artichokes by removing the hardest outer leaves, cut into slices (If you use frozen foods you can move on to phase 2). Place the artichokes in a pan with the oil and garlic. Cook them for a few minutes and add the diced tomatoes.

Add salt, pepper and basil (to your liking) and let the sauce cook for about 30 minutes. Just before turning off the heat, add the parsley.

In the meantime, cook the spaghetti in plenty of salted water. Cooking al dente is recommended. Once cooked, season with the artichoke sauce. If you like, you can add some grated cheese.
