A new cocktail dedicated to Varese and its province is about to be born. To their excellences and to the people who still enjoy inventing, experimenting and believing in others, where they see the same passionate light in their eyes.
A cocktail, and you will soon understand why, with quicksilver on you.
It will be called “Rosa Varese”. Pink, like the color of Apollo 11, the refined liqueur-aperitif born on the day man first set foot on the Moon, symbol of a city and one of its most historic venues. And pink like the shade that another ingredient of the composition takes on – the Karkade, infusion that comes from hibiscus – when it meets the true protagonist of this beautiful story of taste and research: the gin.
Not just any gin, but GinGumfor two years now the most famous in the province of Varese, capable of conquering – after finishing on the “roof of the world” in the “The International Wine & Spirit” competition in 2023 – also silver at another prestigious international event, the “World Gin Awards”a medal that follows the bronze awarded last year, again at the World Gin Awards the label.

As Silvia Abbate, owner of Cocktail and Dreams in via Duca degli Abruzzi 132, in Calcinate del Pesce, the one who introduced GinGum and saw it grow through combinations and evenings. This time too there is his contribution, together with that of Roberto and Apollo 11: «The initial desire was to pay homage to our city with a novelty that “celebrated” the silver obtained from GinGum – explains Pordenon – Personally I felt the desire to emphasize the floral part of our gin by using an elderflower tonic, and then rebalancing it with natural elements and acids of different nature. The result was not intended to be a substitute for a gin and tonic, but rather a new, current drink with organoleptic sensations as an end in themselves. With Silvia we therefore refined it and found in Apollo 11 not only a useful ingredient for achieving the goal, but also an enthusiastic partner, who expressed appreciation at the tasting test and uniformity of views in the project, precisely that of wanting to dedicate a low alcohol drink in Varese and its province.”
The magic formula is therefore soon written: GinGum, Karkadé, elderberry tonic, Apollo 11 and ice. The result is «a fresh, drinkable drink, around 10 degrees, very light and very summery, with a nice play of contrasts between the sweetness of the elderberry and the acidity of the Karkadé».
But when will Rosa Varese be available for Varese palates? The idea of the “partners in crime” of the new cocktail is to present it in a dedicated event to be held at Pirola in via Veratti 10 in the historic center, Friday 7 June.
If they are… real roses, they will bloom this time too. Roberto Pordenon’s words come to mind two years ago, when it all began: the idea of creating a product that rediscovered those flavours, those sensations, those aromas that he and his friends had always loved, but which was not a simple attempt “selfish”, as much as something that could become expendable over time…
Between silver, friendships, sips and new cocktails, that time did not pass in vain.
