“Beautiful challenge, I hope to open for Christmas”

Imola, 30 April 2024 – Sebastiano Caridi, the former Bacchilega bar had been waiting to be relaunched for years. What is your project?

“In Faenza we opened years ago, concentrating everything on high-level pastry making, while in Bologna our restaurant, in the historic Palazzo Fava, has an all-round concept, from breakfast to aperitifs to the tea room. Here, we want Imola is a combination of these two things.”

Why did you decide to invest in Imola?

“Because it is a demanding and beautiful challenge. On a logistical level, we are halfway between Bologna and Faenza and this in itself is an important point. But the truly crucial point is that we want to relaunch such an important and historic place in the city, we have the ambition to create the perfect venue”.

When do you plan to open?

“The place has been closed for more than ten years, we will make a significant investment to do things properly. Since we are also famous for leavened desserts, I hope to let the people of Imola taste our panettone for Christmas….” .

There is important work to be done in a listed historic building. How do you plan to proceed?

“We will talk to the Superintendency and find the solution. We need interventions on the bathrooms, but also on the furnishings and systems. We will safeguard the elegance with an eye on functionality. It is not my intention to create an elitist place, where few people enter. I want a place open to many people.”

You were heavily damaged by the flood. The restart therefore also starts from Imola…

“One year my place in Faenza was hit hard. We had one meter of water in the pastry shop. We were injured, but we rolled up our sleeves to start again. And this restart now also passes through Imola. We want to make our contribution, the The municipality is doing a lot for the center and we will do our part.”

Will you make any creations dedicated to Imola?

“I really think so. I’m a creative person and something dedicated to Imola will arrive.”
