Therefore, with Nicola Giotti the chocolate eggs become a sweet canvas on the
which to give shape and image to paintings of sacred art, in this specific case
juncture, particularly evocative and exciting designs because, how
the title of the exhibition suggests, they shine with light, an inherent element
in chocolate, enhanced by the invention of «indirect airbrushing
shiny specular”. It is a sweet art decoration technique
invented by Nicola Giotti himself, consisting of airbrushing,
through the use of food colours, covering films in the mould
polycarbonate inside a concave and transparent shape. An operation
particularly difficult and laborious which is completed by pouring the
melted and tempered chocolate in previously airbrushed molds,
procedure which will determine the molecular assimilation of the pigments of
color and, with subsequent crystallization, the definitive realization
of an artisanal product of rare beauty and shine.

Born in 1975, Nicola Giotti has a strong bond with Molfetta for having
attended the local hotel institute as a model student, where he
graduated in 1994 as the best student in the school. Afterwards,
deepens his studies and knowledge of pastry making by participating in
dozens and dozens of training courses with the best teachers and
industry professionals worldwide.

So, in 2010 he began the experiments that would lead him to invent
“glossy specular indirect airbrushing”, consecrated as a technique
pastry decoration in 2018. A technique through which Giotti
creates true works of art, starting from the inimitable eggs of
chocolate similar to the very fine porcelain on which he depicted
also Pope Francis on the occasion of the apostolic visit made to Molfetta
in 2018. There were also many stars from the world of entertainment immortalized on the
her sweet creatures, from Elena Sofia Ricci to Mariagrazia Cucinotta, with the
who participated in a short film as an expert
pastry shop, from Hollywood star John Turturro to director and actor
Sergio Rubini up to the rock star Vasco Rossi, the presenter Mara Venier,
to the rapper Caparezza and the actor and voice actor Luca Ward.

Judge in some of the most important pastry competitions in 2020
Giotti published his first book «Metamorphosis» published by Chiriotti, il
most prestigious publisher in the sector, a volume that in 2022 the author has
presented in the Senate with his airbrushed chocolate eggs.
